Maxime Dubuet-Boillot

Maxime’s mother grew up in Volnay with her brothers and her sister, eldest of Pierre Boillot's siblings, his grandfather who in turn was already descended from a dynasty of winegrowers established for several decades on the land dear to their heart. It was at the beginning of the1950s that his grandfather began to settle down to take over from his father Victor Boillot, who had recently returned from the war. He did internships with the Boillot family and at the Domaine de Nuits Saint Georges, before taking over the family estate his grandfather Pierre Boillot founded.

Today, Maxime cultivates five hectares of pristine vineyards including plots in numerous prestigious Premiers Crus, while striving to produce precise and harmonious cuvées that reflect his deep respect for the environment and his family traditions. After full cultivation, the plot of “Sur Roches” was one of the first plots worked by his grandfather. As a nod to their history and benefiting from an ideall y exposed soil quality, his first cuvée was born there.

A village blend which has open, expressive fruit. Lively and energetic for a Beaune, it shows a floral openness and a pinot droit character. Almost a third of this is 1er-cru fruit.

Pinot Noir from 55-year-old vines planted on a 20-acre plot, a Premier Cru facing South/South-East, just outside Savigny-lès-Beaune. Harvested by hand, meticulously sorted, destemming while keeping around 15% whole bunches, cold pre-fermentation maceration for 3 to 4 days, start of fermentations without any inputs, gentle pressing, 12 months of aging in French oak barrels, with 20% new oak.

​La Riotte is a plot that overlooks the village of MONTHELIE from the east. Slightly sloping, its exposure is South / South West, planted in the early 1960s. Nowadays, the climate of Les Riottes extends over approximately 4 hectares. Originally only 3 owners (0.74 hectares) could claim the name of this climate.

Vineyards located high on the slope, and for village wines given all the love. This is a semi-carbonic beast that includes 100% whole clusters, giving it an expressive energy that is elegant and delicate.

This Volnay, classified as a 1er cru in the “Pitures” climate, reveals delicate floral notes which intermingle with fruity and spicy nuances. A beautiful aromatic complexity and tannins which only ask to be polished with time.

It has a ruby red color. The nose exudes aromas of red (cherries, currants) and black (blackberries, blueberries) berries, with spicy notes. The mouth is round, fruity, with a nice fullness and chewiness.

​The Corton has a deep purple red color. The nose evokes notes of flowers (violet), small red fruits (redcurrant, cherry) and black fruits (blueberries), with hints of spices. The palate is ample, delicate with silky tannins and a remarkable structure. A great wine to keep

A beautiful depth for this resolutely “Côte de Nuit” vintage! Lovely aromas of stewed red fruits and peony. The tannins are pleasant, and the palate is structured but with a nice freshness on the finish.

Volnay, Vieilles Vignes

Pinot Noir planted in 1953 on a plot of 0.8 hectares with a fairly steep slope, scattered rocky outcrops, abundant pebbles and calcareous scree that guarantee good soil drainage. Hand harvested grapes, whole bunches are fermented for 20 days in vats with pumping over and down, Aged for 18 months in oak barrels, which 30% are new.

The soil of this 0.30 HA plot planted in 1951 is composed of a fraction of brown clay, marl and soft limestone. Planted on the same geological level as the Volnay 1er Cru "En Champans" and "En Taillepieds", La Carelle has the makings of the greats and stands out as one of the top cuvées of the appellation.

From two distinct Pommard terroirs, this wine is powerful and beautifully complex. It presents a nice balance and tannins present but already melted.

This 1er cru has an ideal location, at the bottom of the plot, close to Les Rugiens on land considered “rich, deep, lots of clay, with few stones”. A silky and delicious velvet ribbon lines the palate. In this magnificent vintage, an admirable elegance persistently emerges from this great wine of emotion.
