
Perseval-Farge
Isabelle and Benoist are the unassuming yet passionate people of Perseval-Farge, fifth generation of a domaine created in 1808, while their son, Hugo, is slowly taking over. The domaine is located in Chamery, a Premier Cru village in the Montagne de Reims.

They produce about 30,000 bottles a year and own 4 hectares of vineyards, planted to Pinot Noir (40%), Chardonnay (35%), Meunier (15%), and a small portion of old vines of the ancestral, less frequently encountered approved varieties—Pinot Blanc, Pinot Gris, Arbanne, and Petit Meslier.

The range of wines is quite impressive, and from the basic NV to the prestige cuvée, most of them show the PF signature of richness and a pleasant hint of oxidation. Almost every non-vintage wine includes at least 40% of oak-aged reserve wines, with an aging time on lees of no less than 5 years, which adds a nice touch of maturity and gives the wine character.
Brut C. de Réserve Chamery 1er Cru Brut
A gentle pressing is done with a vertical press and the juice is vinified both in stainless steel vats and in barrels (not new). About two-thirds of the wine
goes through a malo-lactic fermentation. This cuvée blends several vintages with at least 50% being reserve wine. The Champagne rests 48 months “sur lattes” before being disgorged. Dosage: 3.5g/l / 20% of oak aging
197 Vintage 2005 Chamery 1er Cru Brut
The solar intensity of 2005, a hot and dry year, is present, highlighted by toasted and roasted notes. An interesting balance between acidity, richness and
a slight bitterness. A vintage champagne whose complexity crowns patience without losing its youth over the years.
La Pucelle Chamery 1er Cru Brut Zero
The perfect emanation of the terroir where finesse, precision, and highlight the particularities of a place called Chamery. The balance of this cuvée is
exciting between the purity of the non-dosage and the density of the Pinot Noir. (Blend of 2013 & 2012 vintages). Dosage: 0g/l / 70% of oak aging
Coteaux Champenois Blanc
A unique wine made of forgotten grapes from a clay-limestone soil facing north-east. A 100% barrel vinification. Ageing on lees for 14 months. No fining,
no filtration. 400 bottles produced.
C. de Chardonnay Chamery 1er Cru Brut
The clayey/sandy terroir of Chamery transpires through this cuvée, Controlled and precise, the expression of this white grape variety takes on its full meaning. Dosage: 5g/l / 20% of oak aging.

Cuvée Jean-Baptiste Chamery 1er Cru Brut
Blend of older vintages (2013, 2011 & 2010). It has a Krug-like profile with deep smoky tones, toast, roasted coffee beans and an incredible richness while still having concentration and an exquisite purity and freshness along with a huge finish. Dosage: 5.5g/l / Bottled in 2014 / 40% of oak aging
Les Goulats Chamery 1er Cru Brut Zero
A beautiful originality with the vinification of forgotten grape varieties associated with the Chardonnay grape variety, which is out of the norm. (Blend of 2013 & 2012 vintages) Dosage: 0g/l / 90% of oak aging / 1,076 bottles produced
