In the heart of the Corbières countryside, Stéphane Serre began making wine at the age of 35. With conviction, a clear philosophy, and wines that truly reflect his approach, he quickly became a distinctive figure in the region—passionate and authentic in the noblest sense.

Stéphane is a deeply rooted Corbières winemaker, emotionally connected to his native land and family history, yet always looking forward. His family’s presence in the region dates back to 1613, when an ancestor lived and worked the land.

​

His estate, L’Amandyère, is built on 2.5 hectares of scattered plots. Since starting the domaine in 2007 and producing his first vintage in 2009, Stéphane has committed to strict practices: during harvest, 50% of the grapes are left on the vine if they don’t meet his standards, and another 20% are discarded during sorting.

A strong believer in rationalised agriculture, he also follows the lunar calendar for all major vineyard and cellar work.

This vintage is the result of a blend of Syrah, Grenache and Carignan 48 months of ageing in stainless still with 10% in demi-muid.

These vines are around two decades old and are planted in the Bouscat vineyard, located on the Alaric plateau, where they experience an exceptional climate at an altitude of 320 metres. 48 months of ageing in stainless still vat.

100% Sauvignon Blanc from a parcel located at 666m in altitude. Hand-harvested. Malolactic fermentation. Stirring on the lees for 2 months in ovoid sandstone barrels and new 300L barrels.

Plot selection. Harvesting and destemming by hand. The three separate grape varieties are aged on lees in new barrels.

​This exceptional cuvée demanded 905 hours of meticulous labor and precisely 200,101 hand-selected berries. The fruit hails from the legendary south-facing slope of l’Amandyère — a mythic Syrah parcel perched at 220 meters elevation, where the Mediterranean sun bestows unrivaled intensity. Its neighbor, the Carignan, thrives just 30 meters higher at 250 meters, lending structure and depth to this artful blend. 48 months ageing in 400l barrel followed by 12 month in a settling tank.
